Cooking with Fats and Oils

A couple of weeks ago I had a class on Proteins fats and oils. The most valuable piece of information I took away from that class was about cooking.

I do a lot of cooking with Olive oil and up until two weeks ago I did not know that you are not suppose to use it on high heat. The reason for this is simple, if an oil like olive oil is heated to much it will turn into trans fat. Other good fats like flaxseed oil will also turn into the worst kind of fat (trans fat) if you heat it.

The only fats you should be using on high heat are
  • butter
  • coconut oil
You can use Olive oil on low to med heat.

Never heat the following oils at all, because they will become trans fats.
  • peanut oil
  • flaxseed oil
  • sunflower oil
  • safflower oil
  • corn oil
  • sesame oil
  • rice bran oil
  • grapeseed oil
  • pumpkin seed oil
  • walnut oil
  • chia seed oil
  • poppyseed oil
  • wheat germ oil
  • soybean oil
